FROMAGERIE ESSEME CROSTINI TRIO
Our garlic and herb cultured cashew cheese spread on toasted sliced baguette, topped with seasonal produce:
Pickled ramps (foraged by our assistant Luci), soy roasted sunchoke.
Herbed mashed peas, shaved green almond.
Caramelized shallot, charred spring onion, preserved radish sweet-and-sour.

PRESERVED LEMON SPRING SALAD
Crisp organic lettuces and herbs, fava greens and pea tendrils from the Grand Lake Farmers' Market. Almond yogurt, preserved lemon vinaigrette. Roasted pistachios, brined green peppercorns.

ARTICHOKE DRUMSTICK
Crisped artichoke, saffron aioli, cilantro.

PEPPERCORN PAPPARDELLE
Our freshly made pappardelle tossed in Arbequina extra virgin olive oil and four peppercorn whipped miso cheese. Morels, asparagus, radish, peas, fresh fava beans. Walnut dust, lemon zest.

ARTISAN CHEESE & BREAD SERVICE
Our garlic confit cashew cream cheese, sea salt and olive oil focaccia. Smoked golden beet carpaccio, preserved allium and pickled mustard seed relish. Rhubarb compote.

STRAWBERRIES & CAKE
Slightly salted pound cake, lemon verbena icing, coarse sugar tossed strawberries, tarragon.
